Advances in Technology...

Advice from the Michael Storer Wooden Boat Plans forum:

Now that you've got some solid saw horses, you can clamp the stick along the top of the saw horse with the end of the timber just hanging over the end of the saw horse - one stick on top of the other.

So, I set the second set of chine-log pieces up on the horses (minor variation from the given advice):

I can tell I like using this method for cutting these scarfs.
